Where to Get Farm Fresh Eggs

Fresh eggs are abundant in the North Fork – available at farms, farm stands. and specialty food stores. Also, local eggs are available at the winter farmers markets in Riverhead and Greenport every weekend. But get them fast, they run out quick especially in the colder months.

When the yolks are a deep color and they cook up soft and fluffy, you know the eggs are fresh and nutritious. Do you really want weeks-old eggs that are sitting under fluorescent lights in the supermarket?

Here are our picks for the best: (in no particular order)


Frittata with tomatoes, spinach and goat cheese

6 fresh large eggs

1/2 cup milk

1 tbsp each butter and olive oil

half small onion, diced

10 cherry tomatoes, halved

cup fresh spinach

herbs of your choice. (we used rosemary and parsley)

Goat cheese to taste, crumbled  (or substitute another cheese, grated)

Pre-heat over to 350.

Melt butter and olive oil together in pan. (the pan should be suitable to go into the oven later) Saute onions, tomatoes and spinach for about 10 minutes on low. Whisk together eggs and then add milk, herbs, and salt and pepper to taste.  Add mixture to vegetables and cook on medium-low for five minutes until the edges begin to cook and brown slightly.  Crumble goat cheese on top and place pan in oven for another 8 minutes.  Cool for a couple minutes and then slice into 4-6 pieces.
